Varietal Composition: Assyrtiko 100%
Vinification techniques: Fermentation in French oak barrels and aging of the wine with wine lees for approximately 6 months (method "sur lies").
Production: 40.000 bottles.
Technical data: 14% vol, acidity: 6.6 gr/lt.
Organoleptic characteristics: Bright gold and blonde color, with discreet presence of wood on a citrus background and an elegant whole, with balance, thickness, good acidity and lengthy finish with a characteristic minerality, typical of the variety, at its very best.
Aging potential: Over 7 years.
Serving Suggestions: Fish and white meat with white piquant sauces, smoked cheese and smoked salmon served at 12° C.
Location of vineyard: Santorini, Oia, Imerovigli (in the northern part of the island).
Soil:Consists of fragments of black lava, volcanic ash and pumice. It is classified as sandy for purposes of its mechanical properties. It is poor in organic substances and nitrogen, with minimal clay and a negligible CaCo3 content.
Age of vines: Over 50 years.
Yield in hl per hectare: 18–30hl.
Harvest: Mid August.
